Pepper crusted beef carpaccio with rocket leaves and horseradish aoli

Salad of pear, blue cheese, witlof and pumpkin seed oil

Crisp fried pork belly with chilli caramel sauce and cucumber salad

Chicken liver parfait served with crisp bread, cumberland sauce and mixed leaves

Grilled marinated Haloumi cheese with cherry tomato, red onion and kalamata olives

Fresh Tasmanian Oysters (6) served natural with a cranberry & lime granita

Traditional Wiener Schnitzel served with a rice pilaf, green bean salad, cranberry sauce and lemon wedge

Beef fillet grilled to your liking and served with roesti, grilled mushrooms and white truffle oil

Kassler – Seared smoked loin of pork served with red cabbage, knoedel, steamed broccolini and seeded mustard jus

Oven roasted chicken breast with sweet corn, pancetta risoni, a smoky tomato & pepper dressing and Bulgarian fetta cheese

Pan-seared duck breast and a slow roasted leg with soba noodles, Asian greens and shiitake mushroom sauce

Spice rubbed kangaroo fillet with semolina gnocchi, ratatouille and a thyme & red wine jus

Grilled Atlantic salmon fillet with green beans and almond & dill butter
